2 cardamom pods, crushed
1 tbsp fresh mint, chopped
1 piece preserved stem ginger from a jar, finely chopped, plus 2 tbsp of the syrup
1 pineapple, prepared and cut into chunks
1 papaya, peeled seeded and cut into chunks
1 kiwi fruit, sliced
Method
  1. Place the cardamom pods, mint, ginger syrup and 2 tbsp water into a pan. Bring to the boil.
  2. Remove from the heat and cool for 15 minutes.
  3. Pour over the prepared fruit, stand for 10 minutes and serve.
Chefs tips
  • Delicious with a little half-fat crème fraiche or non-dairy alternative.
  • If you don't have cardamom pods, you could use a good pinch of cinnamon or mixed spice.
