- Place the cardamom pods, mint, ginger syrup and 2 tbsp water into a pan. Bring to the boil.
- Remove from the heat and cool for 15 minutes.
- Pour over the prepared fruit, stand for 10 minutes and serve.
- Delicious with a little half-fat crème fraiche or non-dairy alternative.
- If you don't have cardamom pods, you could use a good pinch of cinnamon or mixed spice.
