Boxing day bites with cranberry sauce

Coronation turkey served in little gem lettuce topped with cranberry sauce make a fresh and simple nibble to use that leftover turkey.

1 tbsp 0% fat Greek yogurt
4-5 spring onions (80g), finely chopped
1 red pepper (160g), finely chopped
1 tsp curry paste
150g cooked turkey, chopped
18 little gem lettuce leaves
3 tsp cranberry sauce
10g chives, chopped
Method
  1. Mix the yogurt, onions, red pepper, curry paste and turkey together.
  2. Spoon into the lettuce leaves.
  3. Add a small blob of cranberry sauce to each and sprinkle with chives to serve.
Chefs tips
  • You could prepare the turkey mixture up to a day in advance and add to the lettuce leaves just before serving.¬†
  • You could use any cooked meat, prawns or ham, or try with 100g cubes of mature cheese plus a finely chopped apple for a veggie version.
  • Try using halved mini peppers or celery sticks in place of lettuce for a different nibble.
