1kg red cabbage, cored and finely sliced
2 eating apples, sliced
1 cinnamon stick
8 cloves
2 tbsp light soft brown sugar
2 tbsp white wine vinegar
knob of butter
Method
  1. Place all the ingredients into a large pan with a tight fitting lid.
  2. Cover and cook over a low heat for 45 minutes, stirring occasionally, until the cabbage is tender. Serve.
Chefs tips
  • Adding vinegar to red cabbage while it is cooking, helps it keep its colour.
  • You could add raisins and/or walnuts to the cabbage when almost ready.
  • You can also use raw red cabbage to make a really colourful coleslaw.
