350g fresh cranberries
3 tbsp port
grated rind and juice 1 orange
intense sweetener or sugar to taste
Method
  1. Place the cranberries, port, orange rind and juice into a pan.
  2. Cover and simmer for 8–10 minutes until softened and juicy.
  3. Stir through sweetener or sugar to taste.
  4. Cool and chill until required.
Chefs tips
  • Try adding a finely chopped Bramley apple along with the cranberries for a twist.
  • Port can be filtered using animal products, so double check the label if you’re vegetarian/vegan.
  • Freezing instructions: Freeze in portions then defrost and serve cold or warm.
