A vegetarian alternative to meat kebabs using marinated tofu and fresh thyme.

1 tbsp olive oil
1 tbsp balsamic vinegar
1 clove garlic, crushed
1 tsp fresh thyme
200g pack tofu (firm), drained and cut into 12 cubes
1 red pepper (150g), cut into chunks
1 yellow pepper (150g), cut into chunks
2 courgettes (250g), cut into chunks
1 red onion (150g), cut into 8 wedges

Method

Recipe tips
  • For a Chinese twist, try adding a heaped tsp of Chinese 5-spice to the marinade.
  • To give a sweet glaze, drizzle the kebabs in 1 tbsp runny honey when they are almost cooked, then grill for a further minute.
