For the meatballs:
1 slice wholemeal bread
2 tbsp skimmed milk
1 egg, beaten
500g turkey breast mince
2 cloves garlic, crushed
I medium onion, grated
1 red pepper, very finely chopped
1 tsp oregano
spray oil
good pinch pepper
To make the eyeballs:
2-3 thin slices red pepper
5-6 pitted black olives
100g light Mozzarella, cut into 20 small discs
20 cocktail sticks
Method
  1. Place the bread into a small bowl and pour over the milk and egg. Leave to soak for 5 minutes, then mash with a fork.
  2. Meanwhile, mix the mince, garlic, onion, red pepper, oregano, and pepper and combine well. Mix in the egg and bread mixture
  3. Wet your hands and form into 20 pieces and roll into small balls (it's best to use your hands for this).
  4. Place onto a lightly-oiled baking sheet and put under a hot grill for 10-12 minutes, turning occasionally until browned all over and cooked through. Allow to cool a little.
  5. Insert a red pepper slice into each olive pit then carefully slice and place a disk of mozzarella on top.
  6. Stack the mozzarella slice underneath the olive pit and secure with a cocktail stick.
Chefs tips
  • You could use pork, beef or lamb mince for the meatballs. Or you can use minced fish such as cod.
