large handful (approx 25g) mixed fresh herbs (eg parsley, mint, oregano, thyme and basil)
1 x 160g tin of tuna in sunflower oil, drain the oil and reserve
25g pine nuts
45g brown breadcrumbs
zest of a lemon
pinch salt and pepper
1 egg, beaten
200g passata
2 wedges of lemon, to serve
Method
  1. Chop the herbs finely, then mix all the ingredients together and form into 12 walnut- sized balls.
  2. Add the oil from the tin of tuna to a frying pan and brown the tuna balls for 10-12 minutes turning regularly.
  3. Meanwhile, heat the passata, add the tuna balls and serve with a lemon wedge.
Chefs tips
  • If you don't have fresh herbs, use 2 tsps of dried, mixed herbs.
  • You could add a pinch of chilli flakes or a crushed clove of garlic to spice them up a little.
