half Savoy cabbage
1 leek
2–3 carrots
3 tbsp extra-virgin olive oil
juice 1 lemon
1 heaped tsp grain mustard
pinch pepper
Method
  1. Remove any really thick stems, then finely shred the cabbage using a mandolin or food processor.
  2. Finely shred the leek and grate the carrots.
  3. Add the olive oil, lemon juice, mustard and pepper. Mix well and refrigerate for at least and hour before serving.
