half Savoy cabbage
1 leek
2–3 carrots
3 tbsp extra-virgin olive oil
juice 1 lemon
1 heaped tsp grain mustard
pinch pepper
Method
- Remove any really thick stems, then finely shred the cabbage using a mandolin or food processor.
- Finely shred the leek and grate the carrots.
- Add the olive oil, lemon juice, mustard and pepper. Mix well and refrigerate for at least and hour before serving.
