120g porridge oats
150g fat-free natural yogurt
3 apples, peeled, cored and grated
1 tbsp sunflower seeds
1 tbsp pumpkin seeds
40g dried cranberries
3 tsp chia seeds and 1 apples, cored and diced, to serve
Method
- Prepare the muesli the night before. Put the oats into a lidded container. Add the yogurt, grated apple, sunflower and pumpkin seeds, dried cranberries and 150ml water. Stir well to combine. Cover, and refrigerate overnight.
- The next morning, stir the muesli well. If it’s too thick, add a little more water until it reaches your preferred consistency.
- Stir 2tsp of the chia seeds into your muesli, then divide between bowls. Scatter over the remaining chia seeds and the diced apple, then serve.

Any combination of fruit and seeds in this recipe. You could try raspberries, bananas, chia seeds or flaxseeds.
