Blueberry and lemon cheesecake

zest half lemon, finely grated
1 tsp lemon juice
1 heaped tsp lemon curd
1 heaped tbsp reduced-fat cream cheese (approx. 60g)
75g blueberries
2 rough oatcakes, crushed
  1. Mix the lemon zest, lemon curd and cream cheese together in a bowl.
  2. Gently crush half the blueberries with a fork and add the lemon juice.
  3. Add remaining blueberries to the cream cheese and lemon curd mixture.
  4. Place the crushed blueberries in the bottom of a glass, top with the lemon cheese, sprinkle with oatcake crumbs and garnish with some lemon zest and a blueberry.
