2 tsp half-fat crème fraiche
4 tsp low-fat natural yogurt
1 tsp medium curry powder
1 tbsp fresh coriander
1 large, boneless, skinless chicken breast, cooked and sliced
3 fresh apricots, sliced
1 mango, peeled and sliced
3 spring onions, chopped
60g rocket salad leaves
Method
  1. In a bowl, mix together the crème fraiche, yogurt, curry powder and coriander.
  2. Stir through the remaining ingredients and serve with couscous, toasted pitta or bread of your choice.
Chefs tips
  • Ideal for using leftover roast chicken, or you could buy a portion of ready-cooked chicken.
  • If you like your food spicy, add a pinch of chilli flakes.
