750g ripe tomatoes, roughly chopped
300ml passata or tomato juice
2 tbsp red wine vinegar
1 tbsp olive oil
pinch sugar
a few drops Tabasco (optional)
1 red onion, finely chopped
half cucumber, chopped small
1 green pepper, deseeded and finely chopped
large bunch fresh basil, torn
freshly ground black pepper
ice cubes, to serve
Method
  1. Place half of the tomatoes in a food processor or blender along with the passata, vinegar, oil, sugar and Tabasco (uf using). Blend until smooth, if the mixture is a little thick then add a little more tomato juice.
  2. Stir through the remaining ingredients, add a few ice cubes and serve.
