1 egg, beaten
1 heaped tbsp natural low-fat yogurt
good pinch white pepper
10g lower-fat Cheddar, grated
5g Parmesan, finely grated
1 spring onion, finely chopped
40g frozen peas, defrosted
1 heaped tbsp wholemeal flour
thirs tsp baking powder or bicarbonate soda
1 heaped tsp chopped chives (save a few to garnish)
half tsp sunflower oil
pinch paprika
Method
  1. In a bowl, beat the egg, yogurt, white pepper and cheeses together, mixing well. Stir in the spring onion and peas.
  2. Stir in the flour and baking powder, mixing well. Lightly oil a mug, then add the ingredients. Heat for 2 minutes on full power (800W) then leave to stand for 1 minute.
  3. Sprinkle with paprika and a few chives to serve.
  4. Can either be eaten direct from the mug or turned out onto a plate and served with salad.
Chefs tips
  • Add more fresh herbs, such as parsley, mint or basil for extra flavour.
  • You could use other vegetables such as sweetcorn, finely chopped celery or peppers.
