"I'm not the best cook in the world - by a long shot. I asked my Dad to pick a recipe and I'd make it for us both... and here's the result! He really enjoyed it - the combination of lemon and chilli worked well and it was surprisingly filling: definitely a meal I'd make again. I went slightly off-recipe and added more veg and, although it looks nothing like the recipe photo, I was pretty pleased!"

"I made this recipe for my family and it was a big hit! It was an added bonus that it was so quick and easy to make - it's since become a firm weeknight favourite in our house. Although the chilli makes it quite spicy, the lime juice complements it really well - you could always use less chilli if you prefer it milder. I added chopped cashews for extra crunch and it went down a treat!"
