4 firm, slightly under ripe pears, peeled with stalk left intact
150ml sugar-free blackcurrant cordial
500-600ml boiling water (enough to cover the pears)
2 star anise
1 cinnamon stick

Recipe tips
  • Works very well with apples in place of pears.
  •  Try using a different cordial or add a few slices of fresh ginger or 2 cloves.
