213g tin red salmon (drained)
4 spring onions, finely chopped
2 tsp capers, roughly chopped
half red pepper, finely chopped
5cm cucumber, deseeded and finely chopped
1 tbsp finely chopped fresh dill/parsley, plus sprig to serve
juice half lemon
good pinch white pepper
25g reduced-fat cream cheese
Method
  1. Remove the skin from the salmon but retain the bones. Add to a bowl, then mix in all the ingredients, except the cream cheese, and mix well.
  2. Stir in the cream cheese, mix again and serve topped with a sprig of dill.
  3. Serve with small squares of toast.
Chefs tips
  • Ideal for spreading on toast, rolling into wraps or as a super sandwich.
  • Add a little 0% fat Greek yogurt to use as a party dip.
  • Spice it up with 1 tsp smoked paprika or chilli seasoning.
