Ingredients
half cucumber, peeled and grated
250g low-fat Greek yogurt
2 cloves garlic, crushed
1 tbsp olive oil
1 tbsp chopped fresh mint
freshly ground black pepper
  1. Place the cucumber in a clean tea towel and squeeze until most of the liquid has been removed.
  2. Combine with the remaining ingredients and serve.
