  • 8 small, boneless chicken thighs (720g)
  • 3 allspice berries
  • 1tsp ground nutmeg
  • 1tsp ground cinnamon
  • 1 small red onion, finely grated
  • 4 spring onions, trimmed and finely chopped
  • 1 red chilli, deseeded and finely chopped
  • 1 lime, finely grated, zested and juiced
  • For the pineapple salsa:
  • 1 medium-sized fresh pineapple, rind removed, or 8 rings of canned pineapple
  • 1 cal oil spray
  • 1 green chilli, deseeded and finely chopped
  • 1 lime, juice only
  • ½ small red onion, finely chopped
  • Small handful fresh coriander, finely chopped
  • For the carrot and apple slaw:
  • 2 carrots, peeled and coarsely grated
  • 1 Granny Smith apple, cored and coarsely grated
  • 2tsp apple cider vinegar
  • 1tbsp sunflower seeds
